pH-K21 / Quality control by measuring the pH value

Measurement of the pH value in meat with pH measuring instrument pH-K21


The NWK pH measuring instrument ph-K21 for quality determination measures the exact pH-value of the meat at the slaughterhouse, which is recorded and evaluated for control purposes approx. 45 min. and approx. 24 h after slaughtering.


For this purpose, the user inserts the measuring tip with the electrode into the meat. The measured values can be used to objectively assess the quality of the meat. The results can also be used to determine the type of production for which the meat can be used.


Further areas of application are the inspection in the cold room, in the cutting room and during the processing for the inspection of e.g. ham or salami in the butcher's shop.

The device is controlled by only 3 buttons and is intuitive to use. It has a functional, versatile equipment with many advantages in handling and application possibilities, which is unique in this combination. Because the pH value depends on the temperature of the meat, this is compensated for by the temperature compensation that can be quickly set manually.


Special electrode: 30,000 to 80,000 measurements


Measuring speed: up to 600 measurements per hour


Measurement data: Up to two measured values are recorded with an accuracy of 1/100 to a consecutive number each (e.g. immediately and 24 hrs after slaughter). This can be set analogous to the sequential number used in the slaughter line, so that a direct assignment to the slaughter database can be made later. The memory holds 4000 results including date, time, pH-value 1, pH-value 2 and a value to be freely assigned. Measurements are made either online, with data being transferred or printed during the measurements, or offline with subsequent transfer of the data to e.g. the pHStat32 evaluation software or a printer. The data is transferred serially via an RS 232 interface.


Display: The measured pH values appear on the graphic LCD display with an accuracy of up to two decimal places.


Case: Body and handle on the pH meter ph-K21 are made of lightweight aluminum. The telescopic sleeve that protects the electrode is made of steel. The strengths of this robust housing come to the fore especially in rough slaughtering operations. The measuring pistol has been ergonomically designed for user-friendliness, fits comfortably in the hand and can be used without getting tired even over longer working sessions. As an alternative to the tip with telescopic protection, a stainless steel tip with knife is also available, this makes it easier to pierce the meat.
